Tabbouleh

Servings: 6 servings

Ingredients
  

  • 500 g fresh tomatoes
  • 500 g cucumbers, peeled
  • 1 white onion
  • 100 ml fresh lemon juice
  • 100 ml extra virgin olive oil
  • 40 g fresh herbs (mint, parsley, chives, tarragon, chervil)
  • 300 g uncooked medium grain couscous
  • 30 g raisins (optional)
  • salt and pepper to taste

Method
 

  1. Grate the tomatoes, cucumbers and onion with a fine grater over a large bowl. The result will be a lot of liquid and pulp.
  2. Add the lemon juice, olive oil and chopped herbs. If using, add the raisins. Season with salt and pepper. Stir well.
  3. Add the couscous to the bowl and cover it. Put the bowl in the fridge for at least 3 hours to absorb the liquid, then serve.
