Method
- Grate the tomatoes, cucumbers and onion with a fine grater over a large bowl. The result will be a lot of liquid and pulp.
- Add the lemon juice, olive oil and chopped herbs. If using, add the raisins. Season with salt and pepper. Stir well.
- Add the couscous to the bowl and cover it. Put the bowl in the fridge for at least 3 hours to absorb the liquid, then serve.
